GRAPPA AND DISTILLATION

Grappa is the distillate of grape marc, the skin of the grapes. The major part of the aromatic element of the grape is found in the grape pomace itself. Therefore Grappa is a very aromatic distillate. Vintage Grappa is obtained by distilling ‘batches’ or rather small quantities of grape pomace that are loaded into copper steam cauldrons, distilled and then unloaded. This artisan method, becoming more and more rare because it is very expensive, allows to transfer in the distillate the essence, the soul of the grape marc. For this reason we say ‘spirit’.
